It’s possibly one of the most challenging varieties to work with, but the most rewarding when you get it right.  A very high-profile winemaking friend of mine once told me “when you think your Pinot is ready to pick, it’s too late”. You really need to have a sixth sense for Pinot. Hand picked from 25 year old vines. The wine was matured in French oak (25% new) for 8 months. Not been fined or filtered and therefore may form a deposit in the bottle after a few years. The silky tannins and marked acidity in this wine perfectly complement rich, creamy dishes such as mushroom risotto.
